WSVN — Chicken is always a great go-to meal and this one is healthy and low fat as well. That’s what’s cooking as we grab a Bite with Belkys.

8 oz. Grilled chicken paillarde (pounded flat)
3 tbs. olive oil
salt and pepper to taste
1/2 cup zucchini, sliced thin
1/2 cup yellow squash, sliced thin
1/2 cup carrots, sliced thin
1/2 cup red onions, sliced thin
6 cherry tomatoes
chopped parsley for garnish

Method of Preparation:
– Start by tenderizing a chicken breast in plastic wrap. When it’s flat, take it out of the wrapping, brush it with olive oil and season with salt and pepper. Set it aside.

– Julienne carrots, yellow squash and zucchini. Chef uses a kitchen mandolin slicer, but you can use a knife or a potato peeler. Mix the vegetables together and add sliced red onions.

– Next, add olive oil and chopped garlic to a hot pan and sauté the vegetables for about a minutes. Add the cherry tomatoes and cook about two minutes. Add salt and pepper to taste. Give it another toss and set aside.

– The chicken breast is next. Put it on a hot grill at 450 degrees. Cook it for a minute and a half on each side, so it has char marks on the top and bottom. Brush on a little more olive oil and it’s ready to plate.

To Plate:
– Plate the chicken first, then the vegetables on top with a drizzle of olive oil and a sprinkle of chopped parsley.

Serving suggestion: Sauvignon Blanc
