WSVN — Easy, quick and healthy are the three magic words for every cook! A delicious vegetarian dish is on the menu today as we grab a Bite with Belkys.

The Chef: Belkys Nerey
The Dish: Broccoli Garbanzo Bean Rice Bowl

4 cups broccoli florets
2 cups cooked brown rice
1 can garbanzo beans, drained, rinsed and dried
1/2 cup sliced green onions
1/4 cup sliced almonds
1/4 cup chopped cilantro
1 Tbs. fresh lemon juice
2 Tbs. pineapple juice
2 Tbs. Dijon mustard
1 Tbs. olive oil
1 Tsp. soy sauce
1 small garlic clove, minced
1/4 Tsp. red pepper flakes
salt and pepper to taste

Method of Preparation:
Steam broccoli for 4-5 minutes until tender.  Add broccoli, cooked rice, garbanzo beans, green onions and the almonds to a large bowl and set aside.

Add dressing ingredients to a small bowl and whisk until well combined. *The almonds and red pepper flakes are optional.

Drizzle the dressing over the rice and broccoli mixture and toss until it’s coated well. Season with salt and pepper and top with chopped cilantro.  Serve warm or room temp.

To Plate:
Serve as a main course or a side dish. Delicious!
