Raw Taco/Green Bar & Kitchen

When you think of plant-based foods, you probably envision salads. But we have a recipe that’s as delicious as it is nutritious. A healthy and organic treat is on the menu tonight as we grab a Bite With Belkys.

The Dish: Raw Tacos

Ingredients:

Nut Meat:
2 cloves garlic
2 jalapeño peppers
1 onion
1 red pepper
2 cups walnuts (can be soaked if preferred)
2 cups sunflower seeds (can be soaked if preferred)
2 tsp. salt
½ cup fresh basil
3 tbs. cumin
3 tbs. chili powder
1 cup tomatoes
Raw Cheddar Cheese sauce:
4 cups soaked cashew
2 bell peppers (yellow for color)
½ cup water
½ cup lemon juice
½ cup nutritional yeast
¼ cup Tahini
4 cloves garlic
2 tbs. sea salt
2.5 tbs. onion powder
Sunflower Cheese:
2 cups sunflower seeds (can be soaked if preferred)
2 cloves garlic
4 oz. lemon juice
1 ½ oz of Ume Plum Vinegar
8 oz of filtered water (add more or less for desired consistency)
1 tsp. of sea salt
Garnish:
Romaine lettuce
Shredded carrots
Cilantro

Method of Preparation:

– First make the nut meat- add raw almonds to a food processor. Blend well and pour into a mixing bowl. Next- blend sunflower seeds, add that to the bowl as well. Sprinkle in some cumin, dried basil, oregano, chopped red bell pepper, sliced jalapeños, and sea salt. Fold it all in. Add chopped tomato, onions and blend again. Set aside.

– Next, make the plant-based raw cheddar cheese. Start with cashews that have been soaked in water and add lemon juice, sea salt, tahini paste, onion powder, garlic, yellow bell pepper and nutritional yeast. Add distilled water and blend. Set that aside.

– The Sun Cheese is next. Start with water-soaked sunflower seeds and put it in a blender. Add Ume Plum Vinegar, garlic, sea salt and lemon juice. Blend- and it’s ready to plate.

To Plate:

Use a piece of romaine lettuce to hold the nut meat…add chopped tomato and garnish with the sun cheese… raw cheddar- shredded carrots- and cilantro. Serve with Flax crackers on the side.

Serving suggestion: Organic Pinot Grigio
