Paglia & Fieno from Serafina

4 oz. of tagliatelle fresh pasta1 tsp. of butter1/2 of a shallot, minced5 oz. of tomato saucebasil, chiffonade (chopped in long strips), as desired2 Tbs. of parmesan cmheese, grated2 tsp. of heavy cream

Method of Preparation:

-Start by cooking pasta in boiling, salted water.

-Next, make the sauce. In a pan, sauté shallots with melted butter.

-Then, add tomato sauce, fresh basil and the cooked pasta.

-Finish with grated parmesan cheese and heavy cream. Mix it all together.

To Plate:

Garnish with a little fresh basil and parmesan cheese.

Serves: 1
