WSVN — St. Patrick’s Day is coming and we have a traditional Irish treat that will make your mouth water. That’s what’s cooking tonight as we grab a Bite with Belkys.

The Restaurant: Fado Irish Pub in Mary Brickell Village, Miami
The Dish: Gaelic Steak Boxty

Ingredients:
Boxty mix
Idaho potatoes – peeled and shredded – 12 oz.
Eggs – 2
Milk – 14 oz.
Butter – softened – 2 tbs.
Water – 1/3 cup
Onion Powder – .5 tbs.
Garlic Powder – .5 tbs.
Seasoning Salt – 1 tbs.
White Pepper – pinch
Salt – 1 tsp.
Flour – 10 oz.
Parsley – chopped – 2 tbs.
Steak
Oil – 1 tbs.
Filet tips (chopped) – 4 oz. for each serving
Yellow onion (julienne) – 2 oz.
Mushrooms (sliced) – 2 oz.
Marinated tomato – 2 tbs.
Brandy – 2 tbs.
Peppercorn Sauce – 2 oz.
Parsley (chopped) – 2 tsp.
Boxty “pancake” – 1 each
Peppercorn Sauce – 1.5 oz. (on top)
Marinated tomatoes
Parsley – 4 tsp.
Sugar – 2 tsp.
Garlic Powder – 1 tsp.
Seasoning Salt – 1 tsp.
Black Pepper – pinch
Thyme Leaves – pinch
Oil – 6 tbs.
Red Wine Vinegar – ¼ cup
Green Onion – I tbs.
Grape Tomatoes – Cut in halves – 1 qt.
Combine all ingredients from part 1 in a mixing bowl.
Add the tomato halves and toss to coat.
Peppercorn Sauce
Part 1
Brandy -2 oz.
Thyme – fresh chopped – pinch
Garlic – chopped – pinch
Green peppercorns in brine -2 tsp.
Black Pepper – ground – pinch
Part 2
Demi Glace – 4 oz.
Beef stock – 1 oz.
Heavy cream 2.5 oz.
Place all ingredients from part 1 in a sauce pot, heat the liquid until the flame burns out. Add ingredients from part 2, using a whisk to blend the sauce. Bring the sauce back up to temp, reduce heat and simmer for 10 minutes.
Garnish:
Green Onion (sliced on bias) – 1 tbs.
Tomato (diced) – 2 tsp.

Method of Preparation:
– First, make the boxty- a traditional Irish potato pancake. Add garlic powder, onion powder, seasoned salt, white pepper, salt and all-purpose flour. Mix well.

– Now add the wet ingredients: melted unsalted butter, eggs, milk and water. Mix well until you get the consistency of a pancake. Add shredded potatoes and parsley and blend again.

– Put non-stick spray in a pan. Get it hot and add a scoop of the boxty mix- making pancakes. Cook 2-3 minutes on each side until a light golden brown. When they’re done, set aside.

– For the steak- add vegetable oil to a hot pan and throw in filet tips. Season with salt and pepper, and then add onions and mushrooms. Sauté for a minute and half. Add brandy, and peppercorn sauce. (Recipe above) Add marinated tomatoes. (Recipe above)

To Plate:
– Chef Greg plates the boxty then pours the filet tips on top. He rolls it up like a burrito. He garnishes with more peppercorn sauce, diced tomatoes and green onion.
