The Brazilians may have tanked in the World Cup but are winners when it comes to great food. Particularly their succulent grilled meats. That’s what’s cooking tonight as we grab a Bite with Belkys.

The Restaurant: Brazaviva Churrascaria in Doral
The Dish: Grilled Pork Tenderloin with Parmesan Cheese
Ingredients:
5 pounds pork tenderloin, trimmed and sliced
1 red pepper, chopped
1 onion, chopped
1/2 lb. passion fruit concentrate
1 bottle white wine
5 tbs. sugar
1 cup salt
1/2 tsp. black pepper
1 cup grated parmesan cheese
Method of Preparation:
-Start by slicing the pork tenderloin an inch thick. Set aside and make the marinade.
– In a blender, add sugar, salt, pepper, passion fruit pulp, chopped onion and red peppers. Blend on medium for about two minutes.
– Pour the mixture over the pork. Add white wine and stir. Marinate for at least eight hours.
– When it’s done marinating, put the pork on skewers and generously coat with parmesan cheese on all sides.
– Grill 10-15 minutes at 350 on a home or rotisserie grill until golden brown.
To Plate:
Chef plates with hearts of palm, mixed greens and cherry tomatoes.
