Ingredients for Mango Slaw:

1 cup of rice vinegar2 Tbs of honey3 lbs. of mango, julienne1/4 cup of red pepper, julienne1/4 cup of a red onion, sliced thin1/4 cup of a red cabbage, sliced1/4 cup of jalapenos, sliced

Method of Preparation:

-In a bowl, combine all the ingredients and let the slaw marinade overnight in the refrigerator. The shelf life is about 4 days.

Ingredients for Spicy Mayonnaise:

2 tsp of Japanese wasabi powder (dilute with 1/2 tsp of water)2 cups of mayonnaise1 cup of sour creamsalt, to tastewhite pepper, to taste

Method of Preparation:

-Mix wasabi powder with mayonnaise and sour cream. Season with salt and white pepper.

Ingredients for Marinade:

2 Tbs of white miso paste1/2 cup of minced garlic, cooked1 1/2 tsp of Korean kimchi paste1 tsp of sriracha hot sauce1/4 cup of rice vinegar1/4 cup of sesame oil3 tsp of blended oil

Method of Preparation:

-Combine all the ingredients in a blender.

Ingredients for Salmon Burger:

7 1/2 cups of salmon, ground3/4 cup of red bell pepper1/2 cup of green onion1/2 cup of salmon marinade (recipe is included)salt, to taste10 brioche buns10 cups of fries

Method of Preparation:

-Combine ground salmon with red pepper, green onion and the salmon marinade. Season with salt.

-Then, use a ring mold to shape the salmon patties. You can save them in plastic wrap and freeze them in advance.

-Grill the salmon patties over a flat top and season with salt.

-Lastly, toast the buns.

To Plate:

Spread the spicy mayonnaise over the buns. Then, serve the salmon burger and top it with the mango slaw. You can pair it with a side of french fries.
