Chef Peter Masiello, of Corsair inside Turnberry Isle Miami Resort, says the smart chef always uses pasta water when making a sauce.

Chef Peter Masiello: "We take some of that pasta water- see it draining from the basket because it’s starchy? We take some of that and we add it into the sauce."

Chef Peter Masiello: "When you add a little bit of that water into your pan, it helps emulsify the sauce. Just that little bit of starchiness helps tighten up the sauce."

That starchy water can make all the difference- between a good pasta sauce and a great one!
