Meatballs are a great comfort food, but they’re not always made with ground beef. We’re going to learn how to make meatballs with ground chicken, delicious and easy too.

The Restaurant: Fork and Balls
The Dish: Chicken Meatballs and Brussels Sprouts


Ground chicken- 1 pound
Egg- 1
Parsley- 1/2 cup
Fennel Seed- 1 teaspoon
Cooked onion- 1/2 cup
Garlic- 1 tablespoon
Salt and pepper to taste

Method of Preparation:

-Cook the onions in 2 tablespoons of olive oil until softened.
-Add the garlic and cook until fragrant
-remove from the heat and let cool
-Combine all ingredients and mix to combine.
-Roll into 3 oz balls and place on a sheet pan lined with parchment paper
-Place in a 400 degree oven until the internal temperature reaches 165 degrees

Brussels Sprouts


6 oz Brussels sprouts
tomato sauce to cover plate
toasted garlic
bacon bits
grated parmesan
1/2 cup italian parsley leaves

Method of Preparation:

-cut the end off the brussels sprouts and remove any loose outer leaves
-cut the brussels sprouts in 1/2
-Place 2 cups of canola oil in a high sides pot and heat to 350 degrees
-place the brussels in the hot oil and cook for approximately 1 minute or until browned
-Remove from the oil and let drain
-toss with 2 tablespoons of the vinaigrette (recipe below)
-Place tomato sauce on the plate to just cover
-add the toasted garlic to the sauce
-top with the brussels and add 2 tablespoons of bacon bits
-then add 2 tablespoons of grated parmesan
-top with the fried parsley
-to toast garlic: slice as thin a possible and add to the hot oil. Cook until golden brown remove and drain on paper towel
-Fry the parsley leaves and drain on paper towels season with salt and pepper and add on top of the brussels

Red Wine Vinaigrette


1/2 cup red wine vinegar
3/4 cup olive oil
1 tablespoon honey
salt and pepper to taste

Method of Preparation:
whisk all ingredient together
