The Dish: Tomato Bread
2 each 4 oz. Ciabatta buns
2 oz. extra virgin olive oil
2 large Beefsteak Tomatoes
1 Tbs. fresh thyme
1 Tsp. each of sea salt and pepper (or to taste)
1 garlic clove
1 oz. Manchego cheese
Method of Preparation:
– Cut your bread in half lengthwise. Brush olive oil on both sides and put the bread on a griddle or in a skillet. Flatten the bread and toast until it’s golden and crisp. Be sure to get both sides.
– Slice ripe Beefsteak tomatoes in half and squeeze out the seeds. Discard the seeds and liquid and grate the tomato pulp side toward the grater. Throw away the skin and strain the liquid again. To the grated tomato pulp, add olive oil, fresh chopped Thyme, pepper and sea salt. Mix well.
– Take the toasted bread off the griddle and rub a garlic clove over the top of the bread. Now, spread the tomato mixture evenly over the bread and top with grated Manchego cheese. Repeat the process with other bread halves.
Cut the bread into four bite-sized pieces, and it’s ready to serve.
