Ingredients for Shrimp with Garlic (Gambas al Ajillo):
5 jumbo shrimp1/2 cup of extra virgin olive oilsalt, to taste1 Tbs of allspice1 Tbs of minced garlic1 pinch of black pepper1 cup of white wine(parsley to garnish)
Method of Preparation:
-In a hot pan, add a little extra virgin olive oil, salt and allspice.
-Then, place the shrimp side by side.
-Next, add minced garlic and black pepper.
-Lastly, pour in a dash of white wine.
Serves: 1
Ingredients for Moros (Rice with Black Beans):
1 1/2 cups of parboiled white rice1 can of black beans (15 oz.) or a bag of black beans1 dried bay leaf1 fresh culantro leaf2 Tbs of extra virgin olive oil1/2 cup of bacon chunks1 green bell pepper, finely chopped1 medium white onion, finely chopped1 Tbs of minced garlic1/2 tsp of sugar1/2 tsp of cuminSalt, to tasteBlack pepper, to taste
Method of Preparation:
-First, prepare a Spanish sofrito. In a hot pan, add extra virgin olive oil and sauté bacon, green bell pepper, onion and garlic.
-Then, add sugar, cumin and soaked black beans (or canned black beans). You must soak the black beans in a pot of water the night before, changing the water once. Also, make sure to add a bay leaf and culantro leaf when soaking the beans.
-Let it simmer. Then, bring it to a boil and add parboiled white rice. Cover the pot and finish cooking the rice and beans in a 350 degree oven for about 20 to 25 minutes.
Serves: 4-6
To Plate:
Serve the shrimp and garlic sauce in a small dish. Place the rice in a cup and flip it over the plate to get a nice presentation. You can garnish with fresh, chopped parsley.
