Chef Michael Pirolo: "Get yourself a wet towel. People are always asking me the easiest way, this is the easiest way I’ve found. Just stick the end of a wooden skewer in and you pull out the vein. It’s that simple."
Chef Michael Pirolo: "It’s a lot of impurities in there. You really don’t want to eat. It’ll be gritty and it’ll have a bitter flavor to it so it’s really important to take these out."
Chef Michael Pirolo: "If you don’t get it the first time, try, try again."
Chef Michael Pirolo: "The beauty of doing it this way is you don’t have to cut the shrimp, so all your shrimp is going to cook evenly. And that’s it."
