Ingredients for marinade:

4 skirt steaks1/4 cup of ginger powder1 tbsp. of garlic powder1 cup of sugar1 can of pineapple juice1 cup of cider vinegar2 cups soy sauce

Ingredients for pineapple salsa:

2 cups of grilled pineapple, 1/2 inch dice2 tbsp. of extra virgin olive oil1 tsp. of kosher saltpepper to taste1 tbsp. of red onion, 1/8 inch dice1 tbsp. cilantro, minced1 tsp. of jalapeño pepper, seeded and minced

Method of Preparation:

-Begin by preparing a marinade. In a bowl, combine ginger powder, garlic powder, sugar, pineapple juice, cider vinegar and soy sauce. Whisk it all together.

-Then, pound the steak. It will help tenderize the meat. Place it in a container and pour the marinade over the top. For best results, let the meat marinate for 24 hours. Once marinated, grill the steak.

-Next, prepare a pineapple salsa. In a bowl, combine grilled pineapple, extra virgin olive oil, kosher salt, pepper, red onion, cilantro and jalapeño. Warm up the salsa and get ready to plate.

To Plate:

Roll up the steak and serve the pineapple salsa over the meat. Grille 401 serves the skirt steak with a side of Jalapeño Mac and Cheese.
