Ingredients for chicken sandwich: (Serves 2)

2 (8 oz.) chicken breastszest of 1 lemon 1/4 cup of olive oil2 tsp. of kosher salt1 tsp. of freshly ground black pepper2 slices of granny smith apple, sliced into 1/2 inch steaks2 soft potato buns1/2 cup of tomato jam1 handful of frisee salad (tossed with pickled red onion, olive oil and salt)

Ingredients for tomato jam: (Makes 2 Cups)

2 peeled shallots, minced1 clove of garlic, minced3 Tbs. of olive oil1 tsp of kosher salt1/2 tsp. of crushed red pepper flakes1 cup of bourbon whiskey1 cup of red wine vinegar2 – 12 oz. cans of peeled tomatoes1 1/2 cup of granulated sugar

Method of Preparation:

-Begin by making a marinade. In a bowl, add lemon zest, olive oil, salt and pepper. Then, marinate the chicken for about 30 minutes.

-In the meantime, prepare a tomato jam. Saute shallots and garlic in a hot pan with olive oil. After, add salt and crushed red pepper flakes.

-Now, carefully pour in bourbon whiskey and red wine vinegar. Let the sauce reduce by half.

-Next, add canned tomatoes and sugar. Let this reduce again and concentrate into a jam.

-Lastly, grill the chicken. Also, grill a slice of granny smith apple. You may pour a little oil over it so it does not stick to the grill.

To Plate:

Spread the tomato jam on potato buns. Place the chicken and apple slice on top. Finish with a little frisee salad.
