The Dishes: Bacon Wrapped Dates & Spinach and Artichoke Dip

Ingredients for Bacon Wrapped Dates:

  • 1 lb of pitted dates
  • 1 lb of bacon (cut in half)
  • 1/2 cup of goat cheese (your choice)
  • Marcona almonds, as needed
  • Oil (for frying)

Method of Preparation:

  • Start by opening the dates. Then, stuff each of them with a little goat cheese and one almond.
  • Next, close the dates, wrap each one with half a strip of bacon and insert a skewer to keep it all in place. You can deep fry them for a few minutes, until they are a nice golden brown. You may also bake the dates in a 400 degree oven for about eight to ten minutes.

To Plate:

You can change each skewer to a more decorative one.

Ingredients for Spinach and Artichoke Dip with Blue Cheese:

  • 1/4 cup of melted butter
  • 1/4 cup of flour
  • 2 cups of cold milk
  • 3 Tbs. of olive oil
  • 1 yellow onion, julienne
  • 2 cups of chopped artichoke hearts (cooked with a little lemon juice, you may also use canned artichokes)
  • 1 lb. of chopped spinach
  • 1/2 cup of cream cheese
  • 3/4 cup of creamy blue cheese (your choice)

Method of Preparation:

  • Start by making a roux. In a hot pan with melted butter whisk in all purpose flour. Then, add milk and whisk until it all thickens. It may take about 8 to 10 minutes to create a béchamel sauce.
  • Next, heat the olive oil on a medium heat and sauté sliced onion until caramelized.
  • In the meantime, cook artichoke hearts with a little squeeze of lemon juice.
  • Once the béchamel sauce is ready, add the artichokes, fresh spinach, cream cheese and caramelized onions.
  • Then, add blue cheese and mix it all together.

To Plate:

Serve the Spinach and Artichoke Dip with tortilla chips and sliced vegetables such as carrots and cucumber.
