1 hamburger patty1/2 tsp. kosher salt and black pepper1 each Brioche hamburger bun1 tbls. melted butter1 slices of Gruyere cheese2 sliced Spanish onions1/2 ounce croutons1 tbls garlic herb mayo1/4 cup cooking sherry1/4 cup water1 tsp. beef boullion1 tsp. chicken boulliondry and fresh thyme

Garlic Herb mayo Preparation:

Make this the day before using 1 cup of regular mayo as a basegarlicfresh chopped tarragon, parsley 7green onionscreole mustardsugarsalt and pepper

Method of Preparation:

-Start by adding the melted butter to a hot pan. When the pan starts to smoke add sliced onions and sauté. Stir periodically until the onions are caramelized to a nice golden brown about 10 minutes.

-Get ready to cook your burger. Salt and pepper the hamburger patty and put it on a hot grill or pan. While it's cooking, butter your bun and toast it.

-Now, turn the burger over and add a slice of Gruyere cheese to the cooked side. Continue cooking the burger and let the cheese melt. Add another slice of cheese to the bottom of the toasted bun and let it melt.

-Next, deglaze the onions with 1/4 cup cooking sherry and a little water. Add 1 teaspoon of beef boullion and one teaspoon of chicken boullion and stir. Finish seasoning with kosher salt, black pepper, and dry and fresh thyme. Stir well and turn off the heat.

-Spread a spoonful of Garlic Herb mayo on the bun (to taste) and add a heaping spoonful of crushed croutons for a nice crunch. Top off the burger with another heaping spoonful of french onions and put it all together.

To Plate:

Serve the French Onion Burger with a side order of french fries.
