1 teaspoon Kosher Salt1 teaspoon olive oil8 ounces Pappardelle Pasta2 tablespoons Garlic Butter6 Rock Shrimp4 cherry tomatoes1/2 cup tomato sauce1/2 cup heavy cream1/2 cup Mozzarella cheese1 tablespoon Basil (julienne)salt and black pepper to taste3 tablespoons ground Parmesan Cheese2 tablespoons Panko bread crumbs
Method of Preparation:
-Start by boiling water in a medium sauce pan. Add a pinch of salt and a teaspoon of olive oil. Add the pasta and cook until al dente- about 7 minutes. Set aside.
-Next, sauté garlic butter in a medium pan until it melts. Add shrimp and sauté for about a minute. Then, add tomatoes, olive oil, salt and pepper and stir. Add tomato sauce, heavy cream and the drained Pappardelli Pasta. Stir and let the mixture reduce.
-Now, add Mozzarella or Chihuahua cheese, salt, pepper, parmesan cheese, fresh basil and stir until everything is mixed.
-Transfer the mixture to an oven dish, sprinkle the top with Panko bread crumbs and broil one to two minutes until the bread crumbs brown.
Serve hot, straight from the oven.
