2 pounds of shrimp, peeled, cleaned and deveined2 cups of mayonnaise2 Tbs. of honey1 tsp. of cayenne pepperblack pepper, to tastesalt, to taste2 Tbs. of hot sauceJuice of 1 lemon3 cups of cake flour1/2 cup of corn starch2 tsp of baking powder2 cups of cold wateroil, to deep fry

Method of Preparation:

-Begin by making a spicy mayonnaise. In a bowl, combine mayonnaise, honey, cayenne pepper, black pepper, salt, hot sauce and lemon juice.

-Then, prepare the batter for the shrimp. In a large bowl, add two cups cake flour, corn starch, baking powder and water. Mix it all together with a spoon and don't worry if there are small clumps. It should be similar to a pancake batter.

-Now, coat the shrimp with the remaining cup of cake flour and with the batter.

-Deep fry the shrimp until they are a nice light golden brown. Place the shrimp on a paper towel to soak up any excess oil.

-Finish by tossing the fried shrimp with the spicy mayonnaise.
