WSVN — Chef Tim Nickey of Komodo in Downtown Miami has an important tip for cooking the perfect steak. He says it’s all about the right temperature.

Chef Tim Nickey: "The one mistake that a lot of people make is… they just take the steak right out of the refrigerator, they have a hot grill, and they just put it right on the grill."

He says that’s a big no no.

Chef Tim Nickey: "The steak gets charred up and burned on the outside, but the inside is still really, really raw."

Chef Tim says let the steak sit at room temperature for one hour before you cook it.

Chef Tim Nickey: "You have a four-hour window before you need to worry about any bacteria, anything like that, so sitting out for an hour is no problem at all."

And for maximum flavor… let the finished steak sit several minutes before serving.

Chef Tim Nickey: "If you just take that steak off the grill, and you start cutting it. All those juice are going to come out and it’s going to turn dry. If you let the steak rest for a couple of minutes and then slice it, it’s going to eat a lot better."
