WSVN — How to choose the perfect steak for you? Chef Nicolay Adinaguev off Steak 954 in Fort Lauderdale has some tips:
Chef Nicolay Adinaguev: "What you’re looking for is for the marbling to be nice and white- that’s what’s going to tell you the difference between a dairy cow and a beef cow."
And…always make sure the meat is fresh.. with a bright red color. To find the perfect steak for you…Know your steak. Filet mignon is the leanest cut.
Chef Nicolay Adinaguev: "That steak right there is going to be your most tender."
New york strip has a little more texture… And great flavor.
Chef Nicolay Adinaguev: "It’s going to have a little more bite to it. More of that genuine beef flavor as well."
And then, there’s the steak for real meat lovers.
Chef Nicolay Adinaguev: "If you like a really decadent steak with lots of marbling and lots of intramuscular fat- the rib eye is the cut for you. Really rich with a really unique type but very soft texture. And then over here you have the eye, which eats almost like a sirloin or a New York strip. So you get a very unique eating experience."
So look for the white marbling rich red color…and enjoy your steak dinner!
