Ingredients for empanada dough:
4 oz. of butter1/2 cup of vegetable oil1 cup of white wine2 Tbs of champagne vinegar1 1/2 Tbs of sugar1 1/2 Tbs of salt1 egg5 cups of all purpose flour
Method of Preparation:
-First, mix cold butter in an electric mixer. Then, slowly pour in vegetable oil.
-Next, combine white wine with champagne vinegar, sugar and salt. Pour this into the mixer.
-After, add egg and all purpose flour. The dough will be ready once it all comes together around the paddle.
-Press the dough together, cut it in half and form it into a flat disc. Wrap it tightly in plastic wrap and let it sit in the fridge for at least four hours.
Ingredients for apple filing:
4 Granny Smith apples, chopped smalljuice of 1/2 a lemonpulp of 1 vanilla bean1/2 tsp of ground cinnamon1/4 tsp of ground nutmeg1/2 oz. of butter1/2 cup of brown sugar1 Tbs of brandy
Method of Preparation:
-In a bowl, add chopped apples, lemon juice, vanilla bean pulp, cinnamon and nutmeg. Mix it all together.
-Then, in a hot pan melt a little butter and toss in the apple mix.
-Next, sprinkle in brown sugar and once it caramelizes lower the heat.
-Finish with a shot of brandy.
-Cool the apple filling in the fridge.
Ingredients for apple filing:
egg washvegetable oil, to deep frycinnamon sugar, for garnish
Method of Preparation for Apple Empanadas:
-Start by rolling out the dough over some flour.
-Then, cut the dough in small circles. You can also purchase empanada dough already made and cut.
-Next, brush some egg wash over the dough and add a small scoop of the apple filing in the center.
-Bring the edges of the dough together and press them down using a fork.
-Deep fry the empanadas in hot oil.
To plate:
Sprinkle cinnamon sugar over the empanadas. You can also serve with vanilla ice cream.
