The Dish: Agrodulce Glazed Florida Swordfish

Ingredients for Agrodulce Glaze:

2-3 Tbs of olive oil

2-3 shallots

1/2 bulb of fennel if large (1 bulb if small)

1/4 cup of golden raisins

2/3 cup of water

2 bay leaves

1 cup of white balsamic vinegar

1 1/2 cup of dry red wine

1/3 cup of sugar

Ingredients for Swordfish Brine:

4 pieces of Florida Swordfish (bloodline out)

3 qts of water

1/2 cup of apple cider vinegar

1 1/2 cup of salt

1/4 cup of sugar

2 cloves of garlic

2 sprigs of thyme (may also add rosemary and bay leaf)

1 Tbs of coriander

1/2 Tbs. of black pepper

4 star anise

salt and white pepper, to taste

Method of Preparation:

-Start by making the glaze. In a hot pot, add olive oil and sauté shallots and fennel. Then, add golden raisins, water, bay leaves, white balsamic vinegar and dry red wine. Let it come to a boil. Next, dissolve in some sugar. Lastly, remove the bay leaves and blend it all together.

-Now, prepare the brine. In a hot pot of water, add apple cider vinegar, kosher salt, sugar, garlic and fresh herbs.

-After, toast coriander, black pepper and star anise. Add these spices to the brine and whisk it all together.

-Next, strain and cool the brine. Then, immerse portions of the swordfish into the brine.

-Now, pat the fish dry. Chef Matthew likes to marinate it with a gremolata which is olive oil mixed with fresh herbs, orange zest and lemon zest. He marinates the fish for at least 24 hours.

-Next, season the swordfish with salt and white pepper and grill.

-To finish, coat the fish with the Agrodulce glaze and let it bake in the oven for a few minutes.

To Plate:

At the restaurant, they like to serve the swordfish with braised baby artichokes. You can garnish with scallions and a drizzle of oil.
