(WSVN) - Peruvian flavors are all the rage at a fun, new, Miami restaurant! Yuca is on the menu — as we grab a bite.

The Chef: Diego Oka
The Restaurant: Yaku by La Mar at the Mandarin Oriental Miami
The Dish: Yuccas Estrelladas

Ingredients:
4 oz. Yucca, cut up
1 oz. Huancaina Rocoto
8 saltine crackers
1/2 oz. Queso Fresco
1/2 oz. garlic butter
1 Tsp. kosher salt
1/4 cup milk
1/2 cup canola oil
1 poached egg
2 Tbs. Feta cheese
2 Tbs. garlic butter
Garnish with fried kale and micro cilantro

Method of Preparation:
– Pour Huancaina Rocoto in a blender. (Equal parts cooked rocoto peppers, red onions and garlic in canola oil.) Add saltine crackers, queso fresco, salt and milk. Blend well, then drizzle in more canola oil to emulsify and blend again. Set aside.

– Fry the yuccas in vegetable oil at 350 degrees for about 5 minutes. Take them out and let them drain. Mash each one with a spoon and then fry them a second time for about three minutes. When they’re golden take them out and drain again. Season with salt.

To Plate:
Plate the Yuccas, and drizzle on the Huancaina sauce. Add garlic butter, feta cheese
the poached egg and he garnishes with fried kale and micro cilantro.

Serving Suggestion: Pisco Punch
