The Dish: Whole Roasted Chicken with Mojo Canario

Ingredients:
1 free range chicken, approximately 3.5 pounds.
1 head Escarole or Curly Endive lettuce
1 cup Mojo Canario
2 oz. olive oil
Salt & Pepper to taste
Mojo Canario
1 cup chopped parsley
1 cup chopped cilantro
1 onion, chopped
2 garlic cloves, chopped
1 lime, juiced
1 lemon, juiced
1 orange, juiced
4 oz. olive oil
** Combine ingredients, mix well.

Method of Preparation:
Butterfly chicken and remove the back bone and breast bone. (See Online Xtra for instructions) Season the chicken with olive oil, salt and pepper. Place the chicken over the lettuce and roast at 425 degrees for 30-40 minutes.

To Plate:
Cut the chicken into 8 pieces and place over the cooked lettuce. Pour Mojo Canario over the top and serve.
