(WSVN) - Every year around this time, foodies rush to get the best food that Miami Spice has to offer.

Restaurants charge $23 for a fixed price lunch, and $39 for dinner. But there aren’t a lot of choices for people who don’t eat meat. And even less choices for dairy-free, meat-free vegans.

Luckily, one Miami restaurant is coming to the rescue in a very tasty way.

Miami Spice is all about trying delicious food, and that includes perfectly cooked vegetables.

Timothy Andriola, Timo: “It’s just vegetables in their pure state, in a simple presentation and there’s no dairy, no flour, it’s just the vegetables standing through.”

If you’re a vegan foodie or just a veggie lover, stop by Timo an Italian gem in Sunny Isles.

Timothy Andriola: “I think everybody is trying to eat a little healthier these days, so in addition to our regular Miami Spice, which does feature traditional Italian fare, we’re offering another menu which is Vegan Spice.”

Timo has been open for 14 years, so they have this cooking thing down.

For Vegan Spice, they’ll start you off with a whipped artichoke.

Timothy Andriola: “We take the artichokes, we purée them, add a touch of vegenaise which has really good natural oils for you, and the on top of that, we put a little mushroom frito and just a little bit of 12-year-aged balsamic vinegar.”

Then it’s on to the second course.

Timothy Andriola: “The second course is our butternut squash lasagna.”

Thinly sliced layers of butternut squash.

Timothy Andriola: “A little bit of almond ricotta folded in with some spinach, and that goes in between the layers, so that’s the lasagna.”

Customer 1: “It was delicious, extremely savory and a really good vegan choice.”

Then the main course.

Timothy Andriola: “Instead of doing a meat steak, were doing a cauliflower steak. It’s got a little mushroom bourdalaise, so a rich stock that we simmer with veggies and white beans. And then we fold in some mushrooms. Then we add a little truffle cauliflower purée.”

Sandy Ritvin, customer: “If you like truffles I definitely recommend trying it with the vegetable demi-glace, it was perfect.”

To finish — as if life wasn’t sweet enough — there’s dessert.

Timothy Andriola: “A chocolate pâté but it’s completely vegan. There’s a little bit of avocado in there. You can’t taste it, but it gives it that dense richness and then we garnish it with a little bit of mixed berry sorbet.”

Erica Freedland, customer: “It was really decadent, and because it was vegan, it makes you feel like you’re doing something good for your body at the same time.”
