WSVN — As our special Bite series continues tonight, 7’s Rosh Lowe celebrates the second night of Hanukkah with a traditional Jewish treat. Latkes are on the menu – let’s grab a bite!
The Chef: Rosh Lowe
The Dish: Sweet Potato Latkes
Ingredients:
1 large yellow onion
1 pound sweet potatoes, (about 2 medium)
4 tablespoons all-purpose flour
2 teaspoon kosher salt
2 large eggs, lightly beaten
1/2 cup vegetable oil or more…depending on your pan. (enough to fry in)
8 teaspoons light sour cream
8 sprigs flat-leaf parsley
* You can also use regular potatoes for this recipe.. and include horseradish in the garnish.
Method of Preparation:
-Start by grating the onion and sweet potatoes. Put them in a bowl to drain the liquid.
– Put the drained potatoes and onions back in the bowl. Add flour and kosher salt. Stir well.
– Next… whisk eggs and add those in as well.
– Get your pan ready to fry… add vegetable oil and put heat to high.
– Take spoonfuls of the potato mixture and put it in the skillet. Press each one down to make a cake. You can make them various sizes.
– Fry them on both sides until they’re golden brown- a few minutes on each side. Carefully take them out to drain on a paper towel.
To Plate:
Plate on a serving dish and garnish with with sour cream…and parsley.
