WSVN — Pasta is the original Italian comfort food, and this morning we have a recipe that’s easy and delicious. That’s what’s cooking, as we grab a Bite with Belkys.
The Chef: Belkys Nerey
The Dish: Spinach Parmesan Pasta
Ingredients:
8 oz. pasta (We used whole wheat Capellini)
3 Tbs. butter
2 cloves garlic, minced
5-6 cups baby spinach
1/2 cup grated Parmesan cheese
salt and pepper to taste
Method of Preparation:
– Add pasta to boiling salted water and cook until al dente. Drain and set aside. You can also reserve a little of the pasta water if you need it later.
– Using the same pot, melt the butter over medium heat. Add the minced garlic and sauté for a minute or two. Don’t let it burn! Add the pasta and spinach and toss until spinach begins to wilt. If the pasta seems dry you can add some of the reserved pasta water (1/3 cup), or even a drizzle of olive oil, if you’d like. Stir in 1/4 cup Parmesan cheese and season with salt and pepper. Gently toss until all are combined.
To Plate:
Pour the pasta into a bowl and add more Parmesan to garnish. This is so easy to make, and it’s delicious!
* Boneless chicken breast or shrimp is also good in this dish. Just add cooked meat/seafood in while when you add the spinach.
