The Dish: Spinach Balls
Ingredients:
2 10-ounce packages of frozen, chopped spinach, thawed and drained
2 cups Italian style seasoned bread crumbs
1 cup grated Parmesan cheese
1/2 cup butter, melted
4 small green onions, finely chopped
4 eggs, lightly beaten
salt and pepper to taste
* The Spinach Balls can be frozen unbaked and made whenever needed, so you’re always ready for a party!
Method of Preparation:
– Preheat oven to 350 degrees. In a medium bowl, add the spinach, bread crumbs, Parmesan, butter, green onions, eggs, salt and pepper. Mix well.
– Shape the mixture into one-inch balls.
– Place on an ungreased cookie sheet and bake at 350 degrees for about 15 minutes, until light golden brown.
To Plate:
Serve hot or at room temperature.
Serves: 8-12 as an appetizer
