WSVN — Shrimp is always a treat- especially when it’s served up with an Asian flair! That’s what’s on the menu as we grab a Bite With Belkys.
The Chef: Belkys Nerey
The Dish: Spicy Shrimp Sauté (A Mario Batali recipe)
Ingredients:
2 Tbs. red curry paste
1/4 cup fish sauce
1/4 cup Sambal (*We used Sriracha)
2 pounds medium shrimp, uncooked, peeled and deveined
3 Tbs. light sesame oil
1 cup sliced scallions
2 Tbs. sweet soy sauce
1 14 oz. can light coconut milk
1 bunch cilantro, chopped
Method of Preparation:
– Combine curry paste, fish sauce, Sriracha, and chili sauce in a medium bowl. Add uncooked shrimp and toss to coat. Place a large nonstick skillet on medium high heat until hot. Add oil and heat until smoking, then add the shrimp mixture and sauté for two minutes. Add scallions, cover and cook for 3 minutes. Stir in sweet soy sauce and coconut milk. Cook for three minutes or until the shrimp is cooked through. Add cilantro and serve.
– If you use cooked shrimp, add when you add the sweet soy sauce and coconut milk.
To Plate:
Serve as is, or over brown or white rice. Delicious!
