WSVN — Pasta is the ultimate Italian comfort food, especially when it’s made with bacon and cheese! That’s what’s cooking, as we grab a Bite with Belkys in her very own kitchen.

The Chef: Belkys Nerey
The Dish: Spaghetti Carbonara

Ingredients:
8 oz. spaghetti
2 large eggs
3/4 cup grated Parmesan cheese
4 slices bacon, diced
4 cloves garlic, minced
kosher salt and freshly ground black pepper (to taste)
2 Tbs. chopped fresh parsley leaves

Method of Preparation:

– In a large pot of boiling water, cook pasta according to instructions. Save 1/2 cup of the water and drain well.

– In a small bowl, whisk together eggs and Parmesan. Set aside.

– Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy. Reserve excess fat.

– Stir in garlic until fragrant, about a minute. Reduce heat to low.

– Working quickly, stir in pasta and egg mixture, one tablespoon at a time until desired consistency is reached.

To Plate:
– Garish with parsley and serve right away.
