WSVN — It’s delicious, healthy and best of all… it’s low fat! Chicken is on the menu as we grab a Bite with Belkys.

The Dish: Skinny Chicken

Ingredients:
1.5 lbs. boneless, skinless chicken breasts
3 Tbs. soy sauce
2 Tbs. rice wine vinegar
1 Tbs. olive oil
salt and pepper to taste
Honey Lemon Sauce
3/4 cup chicken stock
1/4 cup fresh lemon juice
3 Tbs. honey
2 Tbs. cornstarch
pinch of ground ginger
Sriracha sauce (optional)
zest of one lemon

Method of Preparation:

– Cut raw chicken breasts in to bite-sized pieces.  In a bowl, add chicken, soy sauce, rice wine vinegar and salt and pepper.  Marinate for at least 15 minutes, but overnight is better.

– When you’re ready to cook, heat oil in a hot pan on medium-high heat.  Drain the chicken and sauté for 7-8 minutes until it’s cooked through. Take the chicken out of the pan and set aside.

– In a bowl, whisk the chicken stock, lemon juice, honey, cornstarch, ground ginger and Sriracha sauce together. Pour into the empty pan and cook several minutes until the sauce boils and thickens. Taste to season with extra Sriracha or salt and pepper.

– Add the chicken back into the pan and stir until it’s coated evenly.  Add lemon zest, sauté for a couple more minutes and it’s ready!

To Plate:
Garnish with toasted sesame seeds and sliced green onions- or your favorite toppings. Can also be served over brown or white rice.
