WSVN — It’s a super healthy, super easy dish with loads of great flavor… That’s what’s cooking as we grab a bite with 7’s Belkys Nerey.
The Chef: Belkys Nerey
The Dish: Skillet Chickpeas
Ingredients:
4 cups fresh spinach
1 can chickpeas
1 Tbs. olive oil
1 Tsp. cumin
2 garlic cloves, minced
salt and pepper to taste
Method of Preparation:
– Heat the oil and garlic over high heat for two minutes. Add the spinach, chickpeas and cumin to the skillet. Add salt and pepper to taste.
– Stir constantly until the spinach fully wilts and the chickpeas are cooked through.
To Plate:
Enjoy on it’s own or with a piece of crusty bread!
