WSVN — It’s unique take on a seafood treat from one of the hottest new Miami restaurants. That’s what’s cooking tonight as we grab a Bite with Belkys.

The Restaurant: El Cielo in Miami
The Dish: Scallops y el Maiz
Ingredients:
4 pieces corn on the cob
1 large scallop (or several small ones)
Creamed Corn (in blender)
1/2 cup corn (off cob)
1/2 cup heavy cream
1 tsp. salt (or to taste)
1/4 cup water (from pot)
In Mixer
1/4 cup more cold heavy cream
Creamed corn mixture
Peppered Cream Cheese
1/2 cup whipped cream cheese
Cracked pepper (to taste)
Soy Protein Foam
Versawhip modified soy protein (this is in powder form and you can buy it online)
1 cup water
1 tbs. Versawhip soy protein.
2 tbs. lemon juice
* In a mixer add water and gradually add the Versawhip and juice. Blend on high several minutes until foam forms. Set aside.
Method of Preparation:
– First put corn on the grill to roast for just a few minutes. When it’s done, take it off and cut it off the cob. Set some aside and put the rest in a blender with heavy cream, salt and water from a steaming pot of corn and husks. (Chef Juanma says the water from the corn and husks has more flavor). Blend well.
– Use a mixer for this step. Add more heavy cream and the blended corn. Mix on medium high for about two minutes. Set aside.
– For the peppered cream cheese, add cracked black pepper to whipped cream cheese. Mix well and set aside.
– To sauté the scallop… Chef Juanma uses one large scallop, but if you use smaller ones, plan on several per dish. Add butter to a hot pan. Let it brown and add the scallop. Move it around so it doesn’t stick. Baste the top with the butter. The bottom should be nice and brown, and the top should be rare.
– Add sea salt and keep basting. When the scallop is brown on the bottom, it’s time to plate.
To Plate:
The buttered scallop goes on first– brown side up. Then the peppered cream cheese, creamed corn and roasted corn. Chef garnishes with soy protein foam. He tops it off with micro coriander.
