The Dish: Raspberry Brie Sandwich & Cake Frites


For Sandwich

6″ French Baguette

2 slices of Brie Cheese

1/2 cup Spring Mix

1 slice Ham

1 slice Turkey

2 Tbs. Raspberry Jam or Compote

1 Tbs. Butter

For Cake Frites:

Sliced Pound Cake

1/2 cup All-Purpose Flour

1/4 cup Cornstarch

1 Tsp. Baking Powder

2 eggs

1/2 cup milk

1/4 cup sugar

1 Tsp.Cinnamon

Oil for frying (Canola)

Method of Preparation:

– Melt butter on the grill or in a pan. Slice a baguette and put it on the grill face down. Let it toast with the butter, then flip it over. Put Brie cheese on one piece of the baguette, then top it with greens, raspberry jam, sliced ham and turkey. Put the other piece of bread on top, press it down, give it a slice and the sandwich is ready to eat.

– To make the Cake Frites, pour vegetable oil in a pan an inch deep, and heat to 350 degrees.

– In a bowl, add flour, baking powder and corn starch. Mix well. In another bowl, add milk to whole scrambled eggs and blend.

– Slice pound cake into 3-inch sticks about a half-inch thick. Dredge each one in the flour mixture, then the egg wash, and back into the four mixture again to coat. Deep fry the sticks until breading is crisp, turning over once. It only takes about a minute. Sprinkle with sugar and serve with your favorite sauce.

To Plate:

Serve up the Raspberry Brie Sandwich and Cake Frites for a great lunch or dinner combo.
