WSVN — A South Florida chef shows us how to add a gourmet touch to a home-cooked meal. Pork belly is on the menu – as we grab a Bite With Belkys.

The Dish: Pork Belly with Black Truffle Grits
Ingredients:
4 lbs. pork belly
4 cloves garlic
1 bunch thyme
1 cup chicken stock
Truffle Grits
1 cup chicken stock or broth from market (even bouillon cubes will work)
1 cup heavy cream
1 cup stone milled grits
.5 oz black truffle paste from gourmet market
¼ lb butter
Malbec Reduction
½ cup Malbec
1 cup sliced garlic
1 cup julienned shallots
6 sprigs of fresh thyme
1 oz Minus 8 vinegar (available at specialty shops or online)
1 pint demi-glace (from any gourmet market)
½ Tbs. salt
cracked black pepper to taste
Method of Preparation:
– Have the butcher at your market remove the skin from the pork belly when you buy it. Put pork belly in a roasting tray or casserole dish. Add chicken stock or broth, garlic cloves and thyme.
Cover with foil and cook in oven at 225 for 4 hours. You can substitute pork shoulder or Boston butt if pork belly is unavailable. Adjust the cooking time to 8 hours for the shoulder or butt. Let it cool and cut into serving portions.
– For the grits… add broth/stock and cream to a pan and bring to a boil. Stir in grits. Cook on low heat until finished, stirring constantly. Add truffle paste and butter, season with salt and pepper.
– For the Malbec reduction, sauté the garlic and shallots in a sauce pot. When the vegetables are tender, add the Malbec and simmer until the wine is 80% reduced. Once it is reduced add the demi-glace and thyme. Season with salt and pepper; adding the vinegar slowly to taste. Strain through a fine strainer and serve with pork belly.
To Plate:
Plate with the truffle grits, then the pork belly and top with the Malbec reduction.
