The Dish: Orecchiette with Sausage & Porcini Mushrooms
Ingredients:
6 oz. Orecchiette pasta
4 oz. Porcini mushrooms
4 oz. Italian sausage
1 oz. garlic, minced
1 cup heavy cream
5 oz. Mascarpone
Salt & Pepper to taste
2 Tbs. olive oil
1 Tbs. Italian parsley
Parmesan for garnish
Method of Preparation:
– First, make the sauce. Put olive oil in a hot pan, add mild Italian sausage and sauté. When it starts to brown, add sliced Porcini mushrooms and chopped garlic. Stir well.
– Next, add Mascarpone- a kind of cream cheese. Blend it in and add heavy cream. Stir well. Let the sauce come to a boil- about 3-4 minutes to let it reduce. Add salt and pepper to taste and stir again.
– For the pasta, put fresh Orecchiette into boiling water… cook several minutes. When it’s al dente, add it to the sauce- stir — add chopped parsley– and it’s ready!
To Plate:
Chef Claudio plates with more fresh parsley and grated Parmesan cheese.
Serving suggestion: Negroamaro wine
