WSVN — As our special Bite series continues, it’s Deco Drive’s Chris Van Vliet cooking up his favorite comfort food. Mac and cheese is on the menu! Let’s grab a bite.
The Chef: Chris Van Vliet
The Dish: Mom’s Mac & Cheese
Ingredients:
2 cups whole wheat macaroni (or regular)
1 Tbsp. butter or margarine
1 small onion, finely chopped
1 3/4 cups canned crushed tomatoes
2 cups shredded cheddar cheese (medium or sharp)
1/2 cup Parmesan cheese
1 tomato sliced for garnish
salt and pepper to taste
Method of Preparation:
– Preheat the oven to 350 degrees and grease a baking dish.
– Cook macaroni according to directions on package. Drain well.
– Chop onion and sauté in butter until it’s translucent.
– In a bowl, stir together the cooked macaroni, canned tomatoes, cheese and sautéed onion. Season with salt and pepper to taste. Transfer the mixture into a baking dish and top with sliced tomatoes and Parmesan cheese.
– Bake for 30 minutes.
To Plate:
Serve hot with more Parmesan cheese.
