The Dish: Mango Chicken

2 chicken breasts 
1 cup brown rice
2 cups water
1 large ripe mango
1 Tbs. fresh garlic
1 Tbs. diced hot jalapeño
1 Tbs. jalapeño juice
1/4 cup diced red onion 
2 Tbs. fresh cilantro
Juice of 1 large lemon or lime
Salt & Pepper to taste

Method of Preparation:
– They put brown rice in the rice cooker with water and turn it on.

– Spray a pan with cooking spray or olive oil and add chicken breasts. Sauté about 8-9 minutes on each side. 

–  Make the salsa. First, slice your mango…then cube it with small cubes. 

–  Slice some garlic and red onion. Be sure and check the chicken off and on…. turn it over when it's golden brown on one side.

– Chop the cilantro and add jalapeño, jalapeño juice and some lime juice. Assemble all the ingredients in a bowl. Stir well and season to taste.

To Plate:
Plate with brown rice, top with the chicken breast and finally, a generous serving of the mango salsa.
