The Dish: Maine Lobster Roll
Ingredients:
1 whole Maine Lobster
1/2 cup kosher salt
1/4 lb. butter
Béarnaise Sauce
6 each egg yolks
4 1//2 cups lobster butter, melted
7 Tbs. Champagne vinegar
3 Tbs. water
5 Tsp. Old Bay seasoning
Salt to taste
Assembly
1 brioche roll
1 Tsp. chives, chopped
1 Tsp. tarragon, chopped
1/2 Tsp. grated lemon zest
1 oz. Old Bay Béarnaise
1 serving waffle fries or chips
Method of Preparation:
– Boil the tail, arms and claws of a Maine lobster in 4 quarts water. Cook the tails for five minutes and the claws for eight minutes. When it’s done, remove the meat from the shell while it’s still hot. Warm the cooked lobster meat in melted butter for another 13 minutes to give it great flavor!
– For the Béarnaise sauce, fill a pot with water about one-third up from the bottom. Place on high heat to bring to a boil. In the mixing bowl, whip the vinegar, egg yolks and water until frothy. Once the water is boiling, place the bowl on top and whisk aggressively for three minutes. Turn the heat down to medium low and continue to whisk. The yolks should be whisked until they form a thick enough consistency to coat a spoon without seeing through the mixture. Take the pot off the heat and place a towel over it. Return the bowl to the pot. Slowly add the lobster butter. The emulsified mixture should be only a little thinner than mayonnaise. Finish the sauce with the Old Bay seasoning and salt.
– Toast the brioche bun in melted butter. In another bowl, add the lobster meat, the Béarnaise sauce, fresh tarragon and chives and mix well.
To Plate:
– Put the lobster mixture into the toasted brioche bun. Add more sauce to the top with more fresh herbs. Serve with waffle fries, a bread and butter pickle and a sprinkling of lemon zest.
