WSVN — It’s an American classic in a cup. A great new way to make mac and cheese! That’s what’s cooking as we grab a Bite with Belkys.

The Dish: Mac & Cheese Cupcakes

8 oz. elbow macaroni
2 cups shredded cheddar cheese
2 eggs
1 cup milk
1/2 cup seasoned bread crumbs

Method of Preparation:

– Preheat oven to 400 degrees. Line a 12-cup cupcake tine with cupcake liners.
– Bring a pot of salted water to a boil and add macaroni. Let noodles boil for six to eight minutes until al dente.  

– Drain the water and return the cooked macaroni to the pot. Add the cheese and blend until the cheese is melted and the consistency is smooth. (You can use your favorite mac and cheese recipe for this, or even use a boxed recipe. Just follow the directions on the package.)

– Spoon the cooked mac and cheese into each cup until full. Sprinkle bread crumbs over the top.

– Bake at 400 degrees for 15-20 minutes, until golden brown.

To Plate:
Serve in cups and enjoy!
