The Dish: Grandma Doodle's Key Lime Pie
Ingredients:
Pie Crust (you can buy a pre-made crust or make from scratch)
1.5 cups regular graham crackers, crushed
1/3 cup sugar
6 tsp. butter, melted
Filling
2 14 oz cans sweetened condensed milk
1/2 cup light sour cream
3/4 cup Key lime juice
Whipped cream for garnish
Use your favorite canned variety…or here's a simple whipped cream recipe from scratch:
1 cup heavy whipping cream (Heavy gives the best texture)
1/2 cup powdered sugar
1 tsp. vanilla extract
* Beat cream and powdered sugar in a mixer until stiff peaks form. Add vanilla. Spread over the entire top of the pie or pipe along the edge.
Method of Preparation:
– Preheat the oven to 375 degrees. Then cut open a package of graham crackers. Put them in a plastic bag and crush them. Put the crumbs in a mixing bowl with sugar and butter. Blend well.
– Pour the crumbs into a pie pan a little at a time… and press down until it forms a crust and is full up to the sides.
– Put the crust into the oven and bake at 375 for about 7 minutes.
When it's done, take the temperature down to 350 degrees.
– Now start on the filling. Juice the key limes, and pour the juice into a mixing bowl. Add light sour cream and sweetened condensed milk. Mix well.
– Pour the filling into the crust and shake it ever so slightly to smooth it out.
– Bake the pie in the oven at 350 degrees for about ten minutes…
when it's done, let it cool- then chill for 3 hours in the refrigerator.
To Plate:
Garnish with whipped cream and it's ready to eat!
