The Dish: Kale Caesar Salad

Ingredients:
1 bunch baby kale
1 bunch baby romaine lettuce
1/2 cup croutons
Lime Caesar Dressing
1/2 cup plain Greek yogurt
1/2 cup grated Parmesan cheese
1/4 cup fresh lime juice
2 Tbs. olive oil
2 Tbs. anchovy paste
2 Tbs. Worcestershire sauce
1 Tbs. minced garlic
2 Tbs. Dijon mustard
1/4 cup whole milk
salt and pepper to taste

Method of Preparation:
– Combine Caesar dressing ingredients and whisk together until creamy. Adjust according to your taste.

– Mix kale and romaine together, add croutons and toss. Add dressing and toss to coat.

To Plate:
Serve as is, or add more Parmesan cheese to garnish. Whatever you like!
