(WSVN) - It’s a vegetarian dish from a hot new restaurant in Wynwood! That’s what’s cooking tonight as we grab a Bite with Belkys.

The Restaurant: Beaker & Gray in Wynwood
The Dish: Glass Noodle with Chayote, Green Papaya and Chili Vinaigrette
1 pack glass noodles (vermicelli)
2 cups green papaya
2 cups chayote
2 cups roasted salted peanuts
1 cup mint
1 cup basil
1 cup cilantro
2 cups chili vinaigrette
Chili Vinaigrette Recipe (Please note: For less heat, remove pepper seeds before processing)
4 fresno chili peppers
10 cloves garlic
2 cups champagne vinegar
1 cup red wine vinegar
1 cup sugar
1 tbs. salt
¼ cup fish sauce
Drizzle olive oil
Method of Preparation:
– First, make the chili vinaigrette. In a bowl, add sliced chili peppers, jalapeños, garlic and shallots. Add champagne vinegar, red wine vinegar, sugar and salt.
– Place all ingredients in a pot and bring to a boil. Let simmer for five minutes and let cool.
– For salad, cook glass noodles in half water, half white distilled vinegar until soft; then let cool.
– Slice papaya and chayote into thin strips (julienne). Add rainbow baby carrots too if you’d like. Chop herbs.
Place all ingredients in a bowl with chili vinaigrette to taste and toss. Garnish with roasted peanuts and micro basil.
