The Dish: Flan
Ingredients:
Flan
1 can condensed milk
1 can evaporated milk
4 egg yolks
1 tsp. vanilla
3/4 cup sugar
Caramel Sauce
2 cups sugar
1 cup water (room temperature)
Method of Preparation:
– Start with condensed milk. Pour into a bowl and add evaporated milk and egg yolks. Stir well. Add sugar and stir again. Now, stir in vanilla and set aside.
– Next, put a pan of sugar over medium high heat and let it caramelize. Watch carefully so it doesn’t burn, or it will turn bitter. Stir with a metal spoon. It takes about 10 minutes for chunks to melt. When the sugar is melted, carefully add water and keep stirring. The mix will harden. Boil the mix for several more minutes until it reduces to a caramel liquid.
– Place custard cups in a pan and pour the caramel liquid into the bottom of the cups, about a quarter of an inch. Now, gently pour the custard mix on top of the caramel. Pour water into the pan, about an inch deep to help it bake evenly. Cover the pan with foil and bake in the oven at 350 degrees for 45 minutes.
To Plate:
Chef Derek runs a knife along the inside of each cup and carefully turns them upside down. The caramel should pour down the sides. Top the flan with whipped cream, and it’s ready to enjoy!
