Egg White Tortilla/Hyde Beach

You typically think of eggs as a meal for breakfast, but a chef’s recipe will have you wanting them for lunch or dinner too. Time to grab a Bite with Belkys.

The Dish: Egg White Tortilla

Ingredients:
4 each egg whites
1 Tbs. olive oil
2 Tbs. mushroom mix
1 Tbs. Pebre salsa
Cooking Spray
For Pebre Salsa
4 each plum tomatoes
1/4 cup red onions
1/4 Serrano pepper, minced
2 sprigs cilantro, chopped
4 oz. sherry vinegar
2 oz. olive oil
Kosher salt to taste
For Mushrooms
1/4 cup shallots, chopped
1/2 cup White Button mushrooms, sliced
1/2 cup Shiitake mushrooms
1/2 cup Beech mushrooms
1 clove crushed garlic
1 sprig Thyme
1 whole Guindilla pepper (or Chile de Árbol)
1 Tbs. Sherry wine
Parsley for garnish

Method of Preparation:

– Start with olive oil in a hot pan. Add a mix of shallots, fresh thyme, garlic and a Guindilla pepper, which you can buy anywhere. Sauté for a couple of minutes then add White Button and Shiitake musrooms. Give it a toss. Add a bit more olive oil, some Beech mushrooms- then deglaze the pan with some sherry wine. Take out the garlic and pepper and set the mushrooms aside.

– Next- Chef Tito makes the Pebre salsa. Add plum tomatoes, then red onions, minced serrano peppers, chopped cilantro, olive oil, sherry vinegar and salt. Mix well and set aside.

– Add egg whites to a bowl and mix on medium speed. Beat until the whites form soft peaks. Then- fold in the salsa and the mushrooms and mix well. In a small pan, spray cooking oil and put the mixture in. Make sure and get it even. Bake at 350 degrees for about eight minutes.

– While that’s in the oven, heat the remaing mushrooms and mix in the salsa. This will be your garnish. When the eggs are ready– test them with a toothpick in the center. If it comes out clean- it’s ready to serve.

To Plate:

Chef Tito garnishes the Egg White Tortilla with the mushroom and Pebre salsa- then adds a drizzle of olive oil- some sea salt and a parsley leaf.

Serving suggestion: Mimosa
