The Dish: Easy Holiday Dip

Ingredients:
1 Tbs. extra virgin olive oil
1/4 cup diced shallots
2 cloves minced garlic
1/2 minced jalapeno
1 can (15 oz.) canellini beans, drained
juice of one lime
1/2 bunch cilantro, minced
1 Tsp. cumin
salt and pepper to taste

Method of Preparation:

  • Pour olive oil into a small skillet and cook over medium heat. Sauté shallots and garlic until soft, and add salt and pepper. Set aside.
  • Pour the beans into a food processor and blend. Add the sautéed mixture and blend again. Add lime juice and jalapenos, cumin, then finish off with fresh cilantro and blend again. Add more salt and pepper if needed.

To Plate:
Serve with crackers and enjoy!
