WSVN — Steak is melt-in-your-mouth delicious when it's made Japanese style. That's what's cooking tonight as we grab a Bite with Belkys.

The Dish: Dry-aged New York Strip Steak with Mushroom Salad

Ingredients:
1-2 8 oz. dry aged New York strip
8 oz unsalted room temperature butter
1 tsp. chopped parsley
1 tsp. chopped cilantro     
1 clove chopped garlic
1 tbs. chopped shiso
sea salt to taste
Yakitori Sauce to taste
Mushroom Salad
Bibb Lettuce 4-5 leaves
Ponzu Vin. 1.5 oz
Shiitake 3 oz
Shimeji 3 oz
Enoki 1 oz
Garlic, chopped .2oz
Sake .5 oz
soy 1oz
Olive Oil 1 oz
Truffle oil .2 oz
Ponzu Vinaigrette
Soy sauce 2 oz
Suehiro vinegar 2 oz
Oil blend 5 ml
Sesame oil 2 ml
Sugar .2 tbl
Yuzu juice 2oz
Mirin 1  tbl
*blend ingredients well and set aside.

Method of Preparation:
– Sprinkle sea salt and black pepper on dry-aged New York strip steak. Drizzle on olive oil and put it on the grill 3-4 minutes each side. When it begins to caramelize turn it over.

-While the steak is on the grill, Chef makes a salad with shiitake, shimeji, and enoki mushrooms. You can find these at most grocery stores, but if not, don't worry. Any mushrooms will do!

– Back to the steak. Chef Jose brushes it with Yakitori sauce, which you can find at Asian markets. He cooks it another minute, takes it off and lets it rest.

– Next add olive oil to a hot pan and sauté the shiitake mushrooms then the shimeji mushrooms. Add garlic, ginger and sake. Add soy sauce and let it reduce. Add the enoki mushrooms at the end so they don't overcook. Mix it all together and set aside.

– Add ponzu vinaigrette to bibb lettuce, then layer it with the cooked mushrooms to make the salad. Garnish with sliced radish and red shiso, a Japanese mint.

To Plate:
Slice the steak and brush on shiso butter and yakatori sauce. Serve the New York strip on a hot grill with a sprinkle of sea salt- and garnish with more red shiso.

Serving suggestion: Cabernet Sauvignon
