WSVN — It’s tender, juicy fish with a spicy crunch. A new twist on an old favorite. That’s what’s on the menu tonight as we grab a Bite with Belkys.

The Dish: Cheetos Encrusted Mahi Mahi Sandwich

Ingredients:
1 filet of Mahi Mahi, butterflied
Crust
1/2 cup Flamin’ Hot Cheetos
1/2 cup Panko bread crumbs
1 cup buttermilk
1/2 cup sweet chili sauce
1 cup flour
Calypso Sauce
1/4 cup ketchup
1/4 cup mayonnaise
1 Tbs. Sriracha sauce (or to taste)
1 Tbs. ponzu sauce (or to taste)
Slaw
¼ red cabbage
½ green cabbage
½ red onion sliced thin
1/4 cup torn basil, cilantro and chervil
1 Tsp. ginger puree
1 Tsp. garlic puree
1 Tsp. aji amarillo,
Juice of 1 lime
¼ cup mayonnaise
1 tsp. sour cream
1 tsp. ponzu sauce
Salt and pepper to taste
2 toasted buns
Lime and lemon zest

Method of Preparation:
-Start with the Calypso Sauce. Mix together ketchup, mayonnaise, sriracha and ponzu sauce. Set aside.

-Now for the crust, add “Flamin’ Hot” Cheetos to a blender and pulse. When it’s blended, mix it with plain panko bread crumbs.

-Pour sweet chili sauce into a pan of buttermilk and blend.

-For the fish; butterfly a filet of mahi. This will make two sandwiches. Season both sides of the fish with salt and pepper. Dip it in flour, then the buttermilk mix and then the Cheetos/Panko bread crumbs mix. When the fish is coated, fry it in vegetable oil at 350 degrees for 4-5 minutes.

-While the fish is cooking, make the slaw. Chop red cabbage, green cabbage, red onion, green onion, carrots and then add herbs: basil, cilantro and chervil. Add ginger puree, garlic puree, aji amarillo, lime and lemon zest, mayonnaise, sour cream, ponzu sauce and lime juice. Mix well.

-When the fish is done, drain on a paper towel and it’s ready to plate.

To Plate:
-Spread Calypso sauce on the top and bottom of a toasted bun. Stack lettuce, half the Mahi Mahi fillet, green tomato, and the slaw. Squeeze on some lime juice. Serve with fried potato chips and a side of Calypso sauce.
