Caviar Russe is a posh new place where you can indulge your champagne wishes and caviar dreams. It opens next month in the Four Seasons Tower lobby– but we’re taking you inside right now.

At Caviar Russe on Brickell, you can indulge in boutique bubbly, crudos and caviar. The intimate hotspot found in the Four Seasons lobby is all about luxury.

Ilya Panchernikov: "Caviar Russe in Miami is a one of a kind. It’s a destination where people come to celebrate the really precious moments in life."

The decor is chic and bubbly like champagne and caviar beads.  
Ilya Panchernikov: "You can come, sit down and enjoy a great bottle of champagne, have amazing caviar– one of a kind. Have incredible bluefin tuna tartars, have a caviar Caesar salad, which is one of a kind in the United States as far as I know."

Like a piece of art– it’s divine! And the menu is filled with other beautiful gifts from the sea.

David Valencia: "Here we have a Shigoku oyster. It’s a West Coast oyster from Washington state. It’s garnished with a bit of hijiki seaweed salad, meyer lemon confit, dashi foam, a little toasted nori and then finished with a little ossetra caviar."

Check out the smoked hamachi– spiced with cardimon, star anise, cinnamon and topped with the star attraction– caviar!

Ilya Panchernikov: "We’re very discerning. We have a very rigorous process of picking our caviar out. We grade on color, texture, availability and only choose the best for our restaurant."

Don’t know how to indulge in caviar darling? Well, here’s a tip…

Ilya Panchernikov: "The traditional way is to simply have caviar with a side of crème fraîche or chives, crepe blinis, toast points."

Prices start at $95 an ounce… but these scrumptious little pearls of golden ossetra from the Caspian Sea will set you back a little bit more.

Ilya Panchernikov: "About $595 per one ounce."
