WSVN — It’s fried rice- without carbs and without the guilt! That’s what’s cooking – as we grab a Bite with Belkys.

The Dish: Cauliflower Fried Rice

Ingredients:
2 cups frozen peas
1/2 cup water
1/4 cup sesame oil
4 cups cubed pork loin, divided
6 green onions, sliced
1 large carrot, chopped
20 ounces shredded cauliflower
6 Tbs. soy sauce
2 Tbs. fish sauce
2 eggs, beaten

Method of Preparation:
– Stir peas and water together in a saucepan. Bring to a boil. Reduce heat to medium low. Cook and stir until peas are done. Drain and discard water.

– Heat 2 tablespoons of sesame oil in a wok or pan over medium heat. Add pork and cook until lightly browned and cooked through. Transfer the meat to a plate.

– Add remaining sesame oil to the pan. Sauté the green onions, carrots and garlic in hot oil until just softened, about five minutes. Add the cauliflower and mix until slightly browned. Move the mixture to the side and add the beaten eggs to the pan. Scramble them until they’re cooked through, then mix in with vegetables. Add the pork and then fish sauce. Mix well.

To Plate:   Plate by itself or with your favorite garnish and enjoy!
